Ingredients
- 2 pounds of baby potatoes, halved
- 2 tablespoons of olive oil
- 2 cloves of garlic, minced
- 1 tablespoon of fresh rosemary, chopped
- 1 tablespoon of fresh thyme, chopped
- 1 lemon, juiced and zested
- Salt and pepper to taste
- 1/4 cup of grated parmesan cheese
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss 2 pounds of halved baby potatoes with 2 tablespoons of olive oil, 2 cloves of minced garlic, 1 tablespoon of chopped rosemary, 1 tablespoon of chopped thyme, the juice and zest of 1 lemon, and salt and pepper to taste.
- Spread the seasoned potatoes in a single layer on a baking sheet.
- Roast in the preheated oven for 40-45 minutes, or until the potatoes are golden and crispy, stirring once halfway through cooking.
- Remove the roasted potatoes from the oven and sprinkle 1/4 cup of grated parmesan cheese over the top.
- Return the potatoes to the oven for an additional 2-3 minutes, or until the cheese is melted and bubbly.
