  • 2 tablespoons of fresh rosemary, chopped

Instructions

  • Preheat the oven to 425°F (220°C).
  • In a small bowl, mix together the lemon juice, lemon zest, minced garlic, chopped rosemary, chopped thyme, salt, and pepper.
  • Place the whole chicken in a roasting pan and pat it dry with paper towels.
  • Carefully loosen the skin of the chicken and rub half of the lemon herb mixture under the skin, spreading it evenly over the breast and thigh meat.
  • Rub the remaining mixture over the outside of the chicken, coating it evenly.
  • Tie the legs together with kitchen twine and tuck the wing tips under the body of the chicken.
  • Drizzle the olive oil over the chicken and season the outside with additional salt and pepper.
  • Roast the chicken in the preheated oven for 50-60 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden brown and crispy.
  • In a small saucepan, warm the honey over low heat until it becomes thin and easy to brush.
  • During the last 10 minutes of roasting, brush the honey glaze over the chicken, allowing it to caramelize and create a shiny finish.
