Instructions

  • Preheat the oven to 425°F (220°C).
  • Zest both lemons and set the zest aside.
  • In a small bowl, mix together the lemon zest, minced garlic, chopped rosemary, chopped thyme, and olive oil to create a herb paste.
  • Rinse the chicken and pat dry with paper towels. Season the chicken, inside and out, with salt and pepper.
  • Carefully loosen the skin from the chicken breast and thighs. Spread the herb paste under the skin, covering as much of the chicken as possible.
  • Cut one of the zested lemons in half and place it inside the cavity of the chicken.
  • Squeeze the juice from the other lemon over the chicken and rub it in.
  • Tie the legs together with kitchen twine and tuck the wings under the body of the chicken.
  • Place the chicken on a rack in a roasting pan, breast side up.
  • Roast the chicken in the preheated oven for 1 hour and 15 minutes, or until the juices run clear and the internal temperature reaches 165°F (74°C).
  • If the chicken starts to brown too much, cover it loosely with foil.
  • Remove the chicken from the oven and let it rest for 10 minutes before carving.
