Ingredients
- 1 whole chicken (about 4 pounds)
- 2 lemons
- 4 cloves of garlic, minced
- 2 tablespoons of fresh rosemary, chopped
- 2 tablespoons of fresh thyme, chopped
- 2 tablespoons of olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 425°F (220°C).
- Zest both lemons and set the zest aside.
- In a small bowl, mix together the lemon zest, minced garlic, chopped rosemary, chopped thyme, and olive oil to create a herb paste.
- Rinse the chicken and pat dry with paper towels. Season the chicken, inside and out, with salt and pepper.
- Carefully loosen the skin from the chicken breast and thighs. Spread the herb paste under the skin, covering as much of the chicken as possible.
- Cut one of the zested lemons in half and place it inside the cavity of the chicken.
- Squeeze the juice from the other lemon over the chicken and rub it in.
- Tie the legs together with kitchen twine and tuck the wings under the body of the chicken.
- Place the chicken on a rack in a roasting pan, breast side up.
- Roast the chicken in the preheated oven for 1 hour and 15 minutes, or until the juices run clear and the internal temperature reaches 165°F (74°C).
- If the chicken starts to brown too much, cover it loosely with foil.
- Remove the chicken from the oven and let it rest for 10 minutes before carving.
