Honey Glazed Lemon Herb Roast Chicken

Ingredients
- 1 whole chicken (about 4-5 pounds)
- 2 lemons, halved
- 4 cloves of garlic, minced
- 2 tablespoons of fresh rosemary, chopped
- 2 tablespoons of fresh thyme, chopped
- Salt and pepper to taste
- 1/4 cup of honey
- 2 tablespoons of olive oil
Instructions
- Preheat the oven to 425°F (220°C).
- Rinse the chicken and pat dry with paper towels. Season the cavity with salt and pepper, then stuff it with the halved lemons, garlic, and half of the chopped rosemary and thyme.
- Tie the legs together with kitchen twine and tuck the wings under the body of the chicken. Place the chicken in a roasting pan.
- In a small bowl, mix the honey, olive oil, remaining herbs, and a pinch of salt and pepper. Brush the honey glaze all over the chicken, making sure to coat it evenly.
- Roast the chicken in the preheated oven for 1 hour and 15 minutes, or until the juices run clear when the thigh is pierced with a skewer. Baste the chicken with the pan juices and honey glaze every 20 minutes.
- Once the chicken is cooked, remove it from the oven and let it rest for 10-15 minutes before carving. Serve with the pan juices and enjoy!
