Ingredients
- 4 boneless, skinless chicken breasts
- 1/4 cup olive oil
- 1/4 cup fresh lemon juice
- 2 cloves garlic, minced
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh rosemary, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 lemon, sliced for garnish
Instructions
- In a small bowl, whisk together 1/4 cup olive oil, 1/4 cup fresh lemon juice, 2 cloves minced garlic, 1 tablespoon chopped thyme, 1 tablespoon chopped rosemary, 1 teaspoon salt, and 1/2 teaspoon black pepper.
- Place the chicken breasts in a resealable plastic bag and pour the marinade over them. Seal the bag and massage the marinade into the chicken. Marinate in the refrigerator for at least 30 minutes, or up to 4 hours for best flavor.
- Preheat the grill or grill pan to medium-high heat. Remove the chicken from the marinade and discard the excess marinade.
- Grill the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
- Remove the chicken from the grill and let it rest for 5 minutes before serving.
- Garnish with sliced lemon and serve with your favorite side dishes. Enjoy!
