Ingredients
- 8 boneless, skinless chicken thighs
- 1/4 cup olive oil
- 3 cloves garlic, minced
- 2 tablespoons fresh lemon juice
- 1 tablespoon fresh thyme, chopped

- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 pound mixed vegetables (such as carrots, bell peppers, and zucchini), cut into bite-sized pieces
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, whisk together 1/4 cup of olive oil, 3 cloves of minced garlic, 2 tablespoons of fresh lemon juice, 1 tablespoon of chopped fresh thyme, 1 tablespoon of chopped fresh rosemary, 1 teaspoon of salt, and 1/2 teaspoon of black pepper.
