Ingredients
- 8 oz of pasta
- 2 tbsp olive oil
- 4 cloves of garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup broccoli florets
- 1 cup sliced bell peppers
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh lemon juice
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- In a large skillet, heat 2 tbsp of olive oil over medium heat.
- Add 4 cloves of minced garlic to the skillet and sauté for 1-2 minutes until fragrant.
- Add the cherry tomatoes, broccoli florets, and sliced bell peppers to the skillet. Cook for 5-7 minutes until the vegetables are tender-crisp.
- Add the cooked pasta to the skillet and toss to combine with the vegetables.
- Stir in 1/2 cup of grated Parmesan cheese, 1/4 cup of fresh lemon juice, and 1/4 cup of chopped fresh parsley. Season with salt and pepper to taste.
- Cook for an additional 2-3 minutes, stirring occasionally, until the pasta is heated through and the sauce has thickened slightly.
- Remove from heat and serve hot. Enjoy!
