  • 1/4 cup fresh lemon juice
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste

  • Cook the pasta according to package instructions. Drain and set aside.
  • In a large skillet, heat 2 tbsp of olive oil over medium heat.
  • Add 4 cloves of minced garlic to the skillet and sauté for 1-2 minutes until fragrant.
  • Add the cherry tomatoes, broccoli florets, and sliced bell peppers to the skillet. Cook for 5-7 minutes until the vegetables are tender-crisp.
  • Add the cooked pasta to the skillet and toss to combine with the vegetables.
  • Stir in 1/2 cup of grated Parmesan cheese, 1/4 cup of fresh lemon juice, and 1/4 cup of chopped fresh parsley. Season with salt and pepper to taste.
  • Cook for an additional 2-3 minutes, stirring occasionally, until the pasta is heated through and the sauce has thickened slightly.
