  • Meanwhile, in a separate pot, bring the chicken or vegetable broth to a boil. Gradually whisk in the polenta and reduce the heat to low. Cook for 15-20 minutes, stirring occasionally, until the polenta is creamy and thick. Stir in the Parmesan cheese and butter until melted and well combined.
  • To serve, spoon the creamy polenta onto plates and top with the lemon garlic shrimp. Drizzle any remaining sauce from the skillet over the shrimp and polenta. Garnish with chopped parsley and serve hot.
