Instructions

  • Cook the orzo pasta according to package instructions. Drain and set aside.
  • In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the shrimp and cook for 2-3 minutes on each side until pink and opaque. Remove the shrimp from the skillet and set aside.
  • In the same skillet, add the remaining 1 tablespoon of olive oil and sauté the minced garlic for 1-2 minutes until fragrant.
  • Add the cooked orzo to the skillet with the garlic, then pour in the lemon juice and lemon zest. Toss to combine and heat through for 2-3 minutes.
  • Return the cooked shrimp to the skillet and toss to combine with the orzo. Cook for an additional 2-3 minutes until everything is heated through.
  • Season with salt and pepper to taste, then sprinkle with chopped fresh parsley before serving.
  • Serve hot and enjoy!
