  • Pat the scallops dry with paper towels and season with salt and pepper.

  • Add the scallops to the skillet and cook for 2-3 minutes on each side until golden brown. Remove the scallops from the skillet and set aside.
  • In the same skillet, add the remaining 1 tablespoon of olive oil and sauté the minced garlic for 1 minute until fragrant.
  • Pour in the lemon juice and chicken broth, and bring to a simmer. Cook for 2 minutes, stirring occasionally.
  • Reduce the heat to low and whisk in the butter until melted and the sauce has thickened slightly.
  • Return the scallops to the skillet and toss to coat in the lemon garlic sauce. Cook for an additional 1-2 minutes until the scallops are heated through.
  • Sprinkle with chopped fresh parsley and serve immediately. Enjoy!
