Instructions

  • Preheat the oven to 425°F (220°C).
  • In a small bowl, whisk together 1/4 cup of olive oil, minced garlic, lemon juice, lemon zest, salt, black pepper, oregano, thyme, and red pepper flakes.
  • Place the chicken thighs in a large resealable plastic bag and pour the marinade over them. Seal the bag and massage the marinade into the chicken. Marinate in the refrigerator for at least 30 minutes, or up to 4 hours for best flavor.
  • Remove the chicken from the refrigerator and let it sit at room temperature for 15 minutes before roasting.
  • Arrange the chicken thighs on a baking sheet lined with parchment paper, skin side up. Pour any remaining marinade over the chicken.
  • Roast in the preheated oven for 35-40 minutes, or until the chicken is golden brown and the internal temperature reaches 165°F (74°C).
  • Remove the chicken from the oven and let it rest for 5 minutes before serving.
