Ingredients
- 1 block (14 oz) of extra firm tofu, drained and pressed
- 1/4 cup olive oil
- 3 cloves garlic, minced
- Zest and juice of 1 lemon
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 8 cups mixed greens
- 1/4 cup balsamic glaze
Instructions
- Preheat a grill or grill pan over medium-high heat.
- Cut the pressed tofu into 1/2 inch thick slices and place in a shallow dish.
- In a small bowl, whisk together 1/4 cup olive oil, minced garlic, lemon zest and juice, dried oregano, salt, and pepper.
- Pour the marinade over the tofu slices, turning to coat evenly. Let marinate for 10 minutes.
- Grill the tofu for 4-5 minutes on each side, or until grill marks appear and the tofu is heated through.
- While the tofu is grilling, divide the mixed greens among 4 plates.
- Once the tofu is done, place 2 slices on top of each bed of mixed greens.
- Drizzle each plate with 1 tablespoon of balsamic glaze.
- Serve immediately and enjoy!
