Ingredients
- 4 boneless, skinless chicken breasts
- 1/4 cup honey
- 1/4 cup fresh lemon juice
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons chopped fresh parsley for garnish
Instructions
- In a small bowl, whisk together 1/4 cup honey, 1/4 cup fresh lemon juice, 4 cloves minced garlic, 2 tablespoons olive oil, 1 teaspoon dried oregano, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
- Place the chicken breasts in a resealable plastic bag and pour the marinade over the chicken. Seal the bag and massage the marinade into the chicken. Marinate in the refrigerator for at least 30 minutes, or up to 4 hours for maximum flavor.
- Preheat the grill or a grill pan over medium-high heat. Remove the chicken from the marinade and discard the excess marinade.
- Grill the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is no longer pink in the center.
- While the chicken is grilling, pour the remaining marinade into a small saucepan. Bring to a simmer over medium heat and cook for 5-7 minutes, or until the sauce has thickened slightly.
- Once the chicken is cooked, brush the honey glaze over the chicken and continue to grill for an additional 1-2 minutes on each side, allowing the glaze to caramelize.
- Remove the chicken from the grill and let it rest for 5 minutes. Sprinkle with chopped fresh parsley before serving.
