Ingredients
- 4 boneless, skinless chicken breasts
- 1/4 cup olive oil
- 4 cloves garlic, minced
- 1/4 cup fresh lemon juice
- 1 teaspoon lemon zest
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons chopped fresh parsley
Instructions
- In a small bowl, mix together 1/4 cup olive oil, 4 cloves minced garlic, 1/4 cup fresh lemon juice, 1 teaspoon lemon zest, 1 teaspoon dried oregano, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
- Place the chicken breasts in a resealable plastic bag and pour the marinade over them. Seal the bag and marinate in the refrigerator for at least 30 minutes, or up to 4 hours.
- Preheat the grill or a grill pan over medium-high heat. Remove the chicken from the marinade and discard the excess marinade.
- Grill the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
- Remove the chicken from the grill and let it rest for 5 minutes before slicing.
