Ingredients
- 4 boneless, skinless chicken breasts
- 1/2 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 tablespoons unsalted butter
- 1/2 cup chicken broth
- 1/4 cup fresh lemon juice
- 1 tablespoon lemon zest
- 1/2 cup heavy cream
- 2 tablespoons chopped fresh parsley
Instructions
- In a shallow dish, mix 1/2 cup of flour, 1 teaspoon of salt, and 1/2 teaspoon of black pepper.
- Dredge the chicken breasts in the flour mixture, shaking off any excess.
- In a large skillet, melt 2 tablespoons of butter over medium-high heat.
- Add the chicken breasts and cook for 6-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add the remaining 2 tablespoons of butter, chicken broth, lemon juice, and lemon zest. Bring to a simmer and cook for 2-3 minutes, scraping up any browned bits from the bottom of the skillet.
- Reduce the heat to low and stir in the heavy cream. Simmer for an additional 2-3 minutes, or until the sauce has thickened slightly.
- Return the chicken to the skillet and spoon the sauce over the top. Cook for an additional 2-3 minutes, allowing the chicken to heat through and the flavors to meld.
