  • In a separate bowl, mix together 1/2 cup melted butter, 2 eggs, 1/2 cup milk, 1 teaspoon vanilla extract, and 1 tablespoon lemon zest.
  • Gently fold the wet ingredients into the dry ingredients until just combined. Do not overmix. Gently fold in 1 1/2 cups of fresh blueberries.
  • Divide the batter evenly among the muffin cups, filling each about 2/3 full. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  • While the muffins are baking, prepare the lemon glaze by whisking together 1 cup powdered sugar and 2-3 tablespoons of fresh lemon juice until smooth. Add more lemon juice if needed to reach desired consistency.
  • Once the muffins are done, allow them to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
