Spicy Mango Glazed Lechón Asado

Ingredients
- 1 whole pork shoulder (about 8-10 pounds)
- 8 cloves of garlic, minced
- 1 tablespoon of dried oregano
- 1 tablespoon of ground cumin
- 1 tablespoon of salt
- 1 teaspoon of black pepper
- 1 cup of orange juice
- 1/2 cup of lime juice
- 2 cups of mango puree
- 1/4 cup of honey
- 2 tablespoons of hot sauce
- 1/4 cup of brown sugar
- 1 tablespoon of apple cider vinegar
Instructions
- In a small bowl, mix together the minced garlic, dried oregano, ground cumin, salt, and black pepper to create a marinade.
- Using a sharp knife, score the skin of the pork shoulder in a diamond pattern. Rub the marinade all over the pork, making sure to get it into the scores. Cover and refrigerate for at least 4 hours, or preferably overnight.
- Preheat the oven to 325°F (165°C). Place the marinated pork shoulder in a roasting pan and pour the orange juice and lime juice over the top. Cover the pan with aluminum foil and roast for 3 hours.
- While the pork is roasting, prepare the spicy mango glaze. In a saucepan, combine the mango puree, honey, hot sauce, brown sugar, and apple cider vinegar. Bring to a simmer over medium heat and cook for 10-15 minutes, stirring occasionally, until the glaze thickens slightly. Remove from heat and set aside.
- After 3 hours, remove the foil from the roasting pan and increase the oven temperature to 425°F (220°C). Brush the pork shoulder with the spicy mango glaze, making sure to coat it evenly. Return the pork to the oven and roast for an additional 30-45 minutes, or until the skin is crispy and the internal temperature reaches 180°F (82°C).
- Once the pork is done, remove it from the oven and let it rest for 15-20 minutes before carving. Serve the spicy mango glazed Lechón Asado with additional glaze on the side. Enjoy!
