Lebanese Mezze, a delightful array of small dishes, has a rich history dating back to ancient times. The tradition of sharing small plates of food reflects the Lebanese culture of hospitality and abundance. Grilled halloumi, a popular addition to the mezze, brings a unique twist with its savory, slightly salty flavor and satisfyingly chewy texture. Renowned chefs in Lebanon, such as Kamal Mouzawak, have elevated the art of mezze preparation, ensuring that each dish, including the grilled halloumi, is bursting with flavor and authenticity. Today, the best versions of this dish can be found in traditional Lebanese restaurants, where the halloumi is expertly grilled to perfection, creating a delightful contrast of crispy exterior and soft, gooey interior. The key to a successful Lebanese Mezze with grilled halloumi lies in sourcing high-quality halloumi and achieving the perfect balance of smokiness and creaminess through grilling. For a unique twist, some chefs also marinate the halloumi in olive oil and herbs before grilling, adding an extra layer of flavor to this beloved dish.
