Instructions

  • Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  • In a medium bowl, cream together 1 cup of softened butter and 1/2 cup of granulated sugar. Mix in 2 cups of flour and 1/4 teaspoon of salt until a dough forms.
  • Press the dough into the bottom of the prepared baking dish. Bake for 20 minutes in the preheated oven, or until firm and golden.
  • In a small bowl, combine 1 1/2 cups of granulated sugar and 1/4 cup of flour. Whisk in the eggs, lemon juice, and lemon zest. Pour over the baked crust.
  • Bake for an additional 20 minutes in the preheated oven. The bars will firm up as they cool.
  • Allow to cool completely in the baking dish on a wire rack. Once cooled, dust with powdered sugar and cut into squares. Enjoy!
