Korean BBQ Mushroom Medley

Ingredients
- 1 lb shiitake mushrooms, sliced
- 1 lb oyster mushrooms, chopped
- 1 lb button mushrooms, quartered
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 2 tbsp sesame oil
- 4 cloves garlic, minced
- 1 inch ginger, grated
- 2 green onions, chopped
- 1/2 tsp black pepper
- 1/4 tsp red pepper flakes
- 2 tbsp vegetable oil
Instructions
- In a large bowl, combine 1 lb sliced shiitake mushrooms, 1 lb chopped oyster mushrooms, and 1 lb quartered button mushrooms.
- In a separate bowl, whisk together 1/2 cup soy sauce, 1/4 cup brown sugar, 2 tbsp sesame oil, 4 cloves minced garlic, 1 inch grated ginger, 2 chopped green onions, 1/2 tsp black pepper, and 1/4 tsp red pepper flakes.
- Pour the marinade over the mushrooms and toss to coat. Let marinate for 20 minutes.
- In a large skillet or grill pan, heat 2 tbsp vegetable oil over medium-high heat. Add the marinated mushrooms and cook for 8-10 minutes, stirring occasionally, until the mushrooms are tender and caramelized.
- Serve the Korean BBQ mushroom medley hot with steamed rice and kimchi. Enjoy!
