Kofta is a popular dish in Middle Eastern, South Asian, and Mediterranean cuisines, consisting of spiced ground meat (usually beef, lamb, or chicken) formed into meatballs or patties. The history of kofta dates back to ancient Persia, where it was mentioned in the 10th-century Arabic cookbook Kitab al-Tabikh. Renowned chefs like Yotam Ottolenghi have elevated kofta by incorporating unique spice blends and serving it with vibrant accompaniments. In Egypt, kofta is often made with a mix of beef and lamb, seasoned with cumin and coriander, and grilled to perfection. The best kofta can be found in Istanbul, where it's served with a tangy yogurt sauce and fresh pita. The key to a delicious kofta lies in the perfect balance of spices and the method of cooking, whether it's grilled, baked, or simmered in a flavorful sauce.
