- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 24 oz cream cheese, softened

- 1/2 cup key lime juice
- 1 tbsp key lime zest
- 1 tsp vanilla extract
- 1/2 cup sour cream
- Whipped cream and additional key lime zest for garnish
Instructions
- Preheat the oven to 325°F. Grease a 9-inch springform pan.
- In a medium bowl, mix together 1 1/2 cups graham cracker crumbs, 1/4 cup granulated sugar, and 1/2 cup melted unsalted butter. Press the mixture into the bottom of the prepared pan.
- In a large bowl, beat 24 oz softened cream cheese and 1 cup granulated sugar until smooth. Add 3 large eggs, one at a time, mixing well after each addition.
- Stir in 1/2 cup key lime juice, 1 tbsp key lime zest, and 1 tsp vanilla extract. Gently fold in 1/2 cup sour cream.
- Pour the filling over the crust in the pan. Smooth the top with a spatula.
- Bake in the preheated oven for 55-60 minutes, or until the center is set and the edges are lightly browned.
- Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.
- Remove the cheesecake from the oven and run a knife around the edges to loosen. Refrigerate for at least 4 hours, or overnight.
- Before serving, garnish with whipped cream and additional key lime zest. Enjoy!
