  • Stir in 1/2 cup key lime juice, 1 tbsp key lime zest, and 1 tsp vanilla extract. Gently fold in 1/2 cup sour cream.
  • Pour the filling over the crust in the pan. Smooth the top with a spatula.
  • Bake in the preheated oven for 55-60 minutes, or until the center is set and the edges are lightly browned.
  • Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.
  • Remove the cheesecake from the oven and run a knife around the edges to loosen. Refrigerate for at least 4 hours, or overnight.
