Ingredients
- 1 medium head of cauliflower, grated (about 3 cups)
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 egg
- 1/4 cup almond flour
- 1/2 cup sugar-free marinara sauce
- 1 cup shredded mozzarella cheese
- Your choice of pizza toppings (e.g. pepperoni, bell peppers, onions, mushrooms)
Instructions
- Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Place the grated cauliflower in a microwave-safe bowl and microwave on high for 5-6 minutes, or until softened. Allow to cool.
- Once cooled, place the cauliflower in a clean kitchen towel and squeeze out as much moisture as possible.
- In a large bowl, combine the cauliflower, 1/2 cup mozzarella cheese, Parmesan cheese, oregano, garlic powder, salt, pepper, egg, and almond flour. Mix until well combined.
- Transfer the cauliflower mixture to the prepared baking sheet and shape into a 10-inch round crust. Bake for 10-15 minutes, or until golden brown and set.
- Remove the crust from the oven and spread the marinara sauce evenly over the surface. Sprinkle with 1 cup of mozzarella cheese and add your choice of pizza toppings.
- Return the pizza to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
