  • Add 1 cup of chopped kale to the skillet and sauté for 2-3 minutes until slightly wilted.
  • Push the kale to one side of the skillet and add another tablespoon of olive oil.
  • Pour the beaten eggs into the empty side of the skillet and let them cook for 1-2 minutes without stirring.
  • Once the eggs start to set, gently scramble them with the kale using a spatula.
  • Sprinkle 1/4 cup of crumbled feta cheese over the eggs and kale, and continue to cook for another 1-2 minutes until the eggs are fully cooked and the cheese is melted.
  • Divide the scramble onto two plates and serve with sliced avocado on the side.
