Caramelized Onion and Mushroom Jucy Lucy Burger

Ingredients
- 1 pound ground beef
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 slices of cheddar cheese
- 1 onion, thinly sliced
- 8 ounces of mushrooms, sliced
- 2 tablespoons of butter
- 4 hamburger buns
Instructions
- In a bowl, mix the ground beef with 1 teaspoon of salt and 1/2 teaspoon of black pepper. Divide the mixture into 8 equal portions and form them into thin patties.
- Place 2 slices of cheddar cheese on 4 of the patties, leaving a border around the edges. Top with the remaining 4 patties and press the edges to seal, forming 4 stuffed patties.
- In a skillet over medium heat, melt 1 tablespoon of butter. Add the sliced onions and cook, stirring occasionally, until they are caramelized, about 15 minutes. Remove the onions from the skillet and set aside.
- In the same skillet, melt the remaining 1 tablespoon of butter. Add the sliced mushrooms and cook until they are golden brown and caramelized, about 10 minutes. Remove the mushrooms from the skillet and set aside.
- Heat a grill or skillet over medium-high heat. Cook the stuffed patties for 4-5 minutes on each side, or until they reach your desired level of doneness.
- Toast the hamburger buns on the grill or in a toaster.
- Assemble the burgers by placing a stuffed patty on the bottom half of each bun, then topping with the caramelized onions and mushrooms. Add the top half of the bun and serve immediately.
