Jimmy Dean Breakfast Skillet

Ingredients
- 1 package of Jimmy Dean sausage (16 oz)
- 4 cups of frozen diced potatoes
- 1 onion, diced
- 1 bell pepper, diced
- 8 eggs
- 1 cup of shredded cheddar cheese
- Salt and pepper to taste
- 2 tablespoons of olive oil
Instructions
- In a large skillet, heat 1 tablespoon of olive oil over medium heat.
- Add the diced potatoes to the skillet and cook for 5-7 minutes, stirring occasionally, until they start to brown.
- Push the potatoes to one side of the skillet and add the remaining tablespoon of olive oil to the empty side.
- Add the diced onion and bell pepper to the skillet and cook for 3-4 minutes until they start to soften.
- Push the vegetables to the side with the potatoes and add the Jimmy Dean sausage to the skillet. Cook for 5-7 minutes, breaking it apart with a spatula, until it is fully cooked.
- In a separate bowl, whisk the eggs and season with salt and pepper.
- Pour the eggs over the sausage, potatoes, and vegetables in the skillet. Cook, stirring occasionally, until the eggs are set.
- Sprinkle the shredded cheddar cheese over the top of the skillet and cover with a lid. Let it sit for 2-3 minutes until the cheese is melted.
