Instructions

  • Place the chicken breasts between two sheets of plastic wrap and pound to an even thickness of about 1/2 inch.
  • Rub the jerk seasoning evenly over both sides of the chicken breasts.
  • Heat the olive oil in a large skillet over medium-high heat. Add the seasoned chicken breasts and cook for 6-7 minutes on each side, or until the internal temperature reaches 165°F.
  • While the chicken is cooking, toast the sandwich buns in a toaster or on a grill until lightly golden.
  • Spread mayonnaise on the bottom half of each bun. Place a chicken breast on top of the mayonnaise, followed by a slice of pepper jack cheese, lettuce, tomato, and red onion. Top with the other half of the bun.
  • Serve the jerk chicken sandwiches immediately and enjoy!
