Instructions

  • Preheat the oven to 375 degrees F. Grease and line a 10x15 inch jelly roll pan with parchment paper.
  • In a large mixing bowl, beat 4 eggs and 3/4 cup of white sugar together until thick and pale in color, about 5 minutes.
  • Stir in 1 teaspoon of vanilla extract.
  • In a separate bowl, sift together 3/4 cup of all-purpose flour, 1 teaspoon of baking powder, and 1/4 teaspoon of salt. Gently fold the dry ingredients into the egg mixture until just combined.
  • Pour the batter into the prepared jelly roll pan and spread it out evenly.
  • Bake for 8-10 minutes or until the cake is golden and springs back when lightly touched.
  • While the cake is baking, lay a clean kitchen towel on the counter and dust it with 1/4 cup of powdered sugar.
  • Once the cake is done, immediately invert it onto the prepared towel. Carefully peel off the parchment paper.
  • Starting at one short end, roll the cake and towel together into a tight spiral. Place seam side down on a wire rack to cool completely.
  • Once the cake has cooled, carefully unroll it and spread 1/2 cup of jelly or jam evenly over the surface.
  • Roll the cake back up without the towel and place it seam side down on a serving platter.
  • Dust the top with additional powdered sugar if desired.
  • Slice and serve the jelly roll. Enjoy!
