Instructions

  • In a bowl, combine 1/4 cup soy sauce, 2 tbsp mirin, 2 tbsp sake, and 2 tbsp sugar. Add the chicken pieces and marinate for 20 minutes.
  • While the chicken is marinating, prepare the spicy mayo dipping sauce by mixing 1/4 cup mayonnaise, 1 tbsp sriracha sauce, and 1 tsp rice vinegar. Set aside.
  • Thread the marinated chicken pieces onto the soaked bamboo skewers.
  • Preheat the grill or broiler to medium-high heat. Grill the chicken skewers for 6-8 minutes, turning occasionally, until cooked through and slightly charred.
  • Serve the yakitori hot with the spicy mayo dipping sauce on the side.
