Ingredients
- 4 boneless, skinless chicken breasts
- 8 oz cream cheese, softened
- 1 cup shredded cheddar cheese
- 4 jalapeno peppers, seeded and finely chopped
- 8 slices bacon
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
Instructions
- Preheat the oven to 375°F (190°C).
- In a mixing bowl, combine 8 oz of softened cream cheese, 1 cup of shredded cheddar cheese, 4 seeded and finely chopped jalapeno peppers, 1 tsp of garlic powder, 1 tsp of onion powder, 1 tsp of paprika, 1/2 tsp of salt, and 1/2 tsp of black pepper.
- Butterfly each chicken breast by slicing it horizontally, but not all the way through, and open it like a book.
- Divide the jalapeno popper filling evenly among the chicken breasts, spreading it over one half of each breast. Fold the other half over the filling to close the chicken breast.
- Wrap 2 slices of bacon around each stuffed chicken breast, securing with toothpicks if necessary.
- Place the bacon-wrapped chicken breasts on a baking sheet and bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the bacon is crispy.
