Ingredients
- 1 can (20 oz) young green jackfruit in brine, drained and rinsed
- 1/4 cup soy sauce
- 2 tablespoons rice vinegar
- 2 tablespoons maple syrup
- 1 teaspoon sesame oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon chili flakes
- 1 cup shredded carrots
- 1 cup shredded daikon radish
- 1/4 cup rice vinegar
- 1/4 cup water
- 2 tablespoons sugar
- 1/2 teaspoon salt
- 4 gluten-free baguettes
- 1/4 cup vegan mayonnaise
- 1/4 cup chopped fresh cilantro
- 1 jalapeno, thinly sliced
- 1 cucumber, thinly sliced
- 1/2 cup fresh mint leaves
Instructions
- Preheat the oven to 350 degrees F.
- In a bowl, mix together the soy sauce, 2 tablespoons rice vinegar, maple syrup, sesame oil, garlic powder, black pepper, and chili flakes. Add the drained and rinsed jackfruit, and let it marinate for 15 minutes.
- In another bowl, combine the shredded carrots and daikon radish with 1/4 cup rice vinegar, water, sugar, and salt. Let it sit for 15 minutes to pickle.
- Slice the gluten-free baguettes in half lengthwise and toast them in the preheated oven for 5 minutes.
- Heat a skillet over medium heat and add the marinated jackfruit. Cook for 8-10 minutes, breaking it apart with a spatula until it resembles pulled pork.
- Spread vegan mayonnaise on the toasted baguettes. Divide the cooked jackfruit among the baguettes. Top with pickled vegetables, cilantro, jalapeno, cucumber, and mint leaves.
