Ingredients
- 1 lb Italian sausage
- 1 cup polenta
- 4 cups water
- 1 cup grated Parmesan cheese
- 2 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- In a large pot, bring 4 cups of water to a boil. Gradually whisk in 1 cup of polenta, reduce heat to low, and cook for 30 minutes, stirring occasionally.
- Stir in 1/2 cup of grated Parmesan cheese into the polenta and keep warm.
- In a large skillet, heat 2 tbsp of olive oil over medium heat. Add 1 chopped onion and 2 minced garlic cloves, and cook until softened.
- Add 1 lb of Italian sausage to the skillet and cook until browned, breaking it up with a spoon as it cooks.
- Stir in 1 can of diced tomatoes, 1 tsp of dried oregano, and salt and pepper to taste. Simmer for 10 minutes.
- Serve the Italian sausage and tomato mixture over the creamy polenta, and sprinkle with the remaining 1/2 cup of grated Parmesan cheese.
