Instructions

  • In a large pot, bring 4 cups of water to a boil. Gradually whisk in 1 cup of polenta, reduce heat to low, and cook for 30 minutes, stirring occasionally.
  • Stir in 1/2 cup of grated Parmesan cheese into the polenta and keep warm.
  • In a large skillet, heat 2 tbsp of olive oil over medium heat. Add 1 chopped onion and 2 minced garlic cloves, and cook until softened.
  • Add 1 lb of Italian sausage to the skillet and cook until browned, breaking it up with a spoon as it cooks.
  • Stir in 1 can of diced tomatoes, 1 tsp of dried oregano, and salt and pepper to taste. Simmer for 10 minutes.
  • Serve the Italian sausage and tomato mixture over the creamy polenta, and sprinkle with the remaining 1/2 cup of grated Parmesan cheese.
