Instructions

  • In a large skillet, cook the spicy Italian sausage over medium heat, breaking it up with a spoon, until browned and cooked through, about 8-10 minutes. Transfer the cooked sausage to a plate and set aside.
  • In a medium saucepan, bring 4 cups of water to a boil. Gradually whisk in 1 cup of yellow cornmeal and 1 tsp of salt. Reduce the heat to low and cook, stirring frequently, for 15-20 minutes or until the polenta is thick and creamy. Stir in the grated Parmesan cheese and keep warm.
  • In the same skillet used for the sausage, heat 2 tbsp of olive oil over medium heat. Add the diced onion and cook for 3-4 minutes until softened. Add the minced garlic and diced red bell pepper, and cook for an additional 2-3 minutes.
  • Stir in the can of diced tomatoes, dried oregano, and red pepper flakes. Season with salt and pepper to taste. Cook for 5 minutes, allowing the flavors to meld together.
  • Return the cooked spicy Italian sausage to the skillet and stir to combine with the tomato mixture.
