Ingredients
- 1 lb spicy Italian sausage, casings removed
- 1 cup yellow cornmeal
- 4 cups water
- 1 tsp salt
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 can (14 oz) diced tomatoes
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- In a large skillet, cook the spicy Italian sausage over medium heat, breaking it up with a spoon, until browned and cooked through, about 8-10 minutes. Transfer the cooked sausage to a plate and set aside.
- In a medium saucepan, bring 4 cups of water to a boil. Gradually whisk in 1 cup of yellow cornmeal and 1 tsp of salt. Reduce the heat to low and cook, stirring frequently, for 15-20 minutes or until the polenta is thick and creamy. Stir in the grated Parmesan cheese and keep warm.
