  • Meanwhile, in a separate saucepan, bring the chicken broth to a boil.
  • Slowly whisk in the instant polenta, stirring constantly to prevent lumps.
  • Reduce the heat to low and continue to cook the polenta, stirring occasionally, for 5 minutes until thickened.
  • Stir in the grated Parmesan cheese, garlic powder, dried oregano, and season with salt and pepper to taste.
  • Add the cooked Italian sausage back to the skillet with the wilted spinach.
