  • In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the Italian sausage links and cook for 12-15 minutes, turning occasionally, until browned and cooked through. Remove from the skillet and set aside.
  • In the same skillet, add the remaining 1 tablespoon of olive oil. Add the sliced onions and cook over medium heat, stirring occasionally, for 15-20 minutes, or until the onions are caramelized and golden brown. Remove from the skillet and set aside.
  • Add the sliced bell peppers to the skillet and cook for 5-7 minutes, or until they are tender-crisp. Season with salt and black pepper.
  • Slice the Italian sausage links into bite-sized pieces and return them to the skillet with the peppers. Cook for an additional 2-3 minutes to heat through.
  • Preheat the oven to 350 degrees F. Open the hoagie rolls and place a slice of provolone cheese on one side of each roll. Place the rolls on a baking sheet and bake for 3-5 minutes, or until the cheese is melted and the rolls are lightly toasted.
  • Divide the sausage and pepper mixture among the hoagie rolls. Top with the caramelized onions and serve immediately.
