Ingredients
- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 2 teaspoons baking powder
- 1 teaspoon baking soda

- 1 cup buttermilk
- 1/2 cup vegetable oil
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 cup hot brewed coffee
- 8 oz mascarpone cheese
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 1/2 cups heavy cream
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, combine 2 cups of flour, 1 1/2 cups of sugar, 3/4 cup of cocoa powder, 2 teaspoons of baking powder, 1 teaspoon of baking soda, and 1/2 teaspoon of salt.
- Add buttermilk, vegetable oil, eggs, and 2 teaspoons of vanilla extract to the dry ingredients. Mix until well combined.
- Stir in the hot brewed coffee until the batter is smooth. It will be thin, but that's okay.
- Divide the batter evenly between the prepared cake pans. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
- In a mixing bowl, beat the mascarpone cheese, powdered sugar, and 1 teaspoon of vanilla extract until smooth and creamy.
- In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the mascarpone mixture until well combined.
- Place one cake layer on a serving plate and spread a layer of the mascarpone frosting on top. Place the second cake layer on top and frost the top and sides with the remaining frosting.
