Ingredients
- 2 cups of all-purpose flour
- 1 1/2 cups of granulated sugar
- 1/2 cup of unsweetened cocoa powder
- 1 1/2 teaspoons of baking powder
- 1 1/2 teaspoons of baking soda
- 1 teaspoon of salt
- 2 eggs
- 1 cup of buttermilk
- 1/2 cup of vegetable oil
- 2 teaspoons of vanilla extract
- 1 cup of hot water
- 1 cup of heavy cream
- 8 ounces of semi-sweet chocolate, chopped
- 2 tablespoons of unsalted butter
Instructions
- Preheat the oven to 350 degrees F. Grease and flour two 9-inch round cake pans.
- In a large bowl, combine 2 cups of flour, 1 1/2 cups of sugar, 1/2 cup of cocoa powder, 1 1/2 teaspoons of baking powder, 1 1/2 teaspoons of baking soda, and 1 teaspoon of salt.
- Add 2 eggs, 1 cup of buttermilk, 1/2 cup of vegetable oil, and 2 teaspoons of vanilla extract to the dry ingredients. Mix until well combined.
- Stir in 1 cup of hot water to the batter. The batter will be thin, but that's okay.
- Divide the batter evenly between the prepared cake pans. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
- To make the chocolate ganache topping, heat 1 cup of heavy cream in a small saucepan over medium heat until it just begins to simmer. Remove from heat and add 8 ounces of chopped semi-sweet chocolate and 2 tablespoons of unsalted butter. Let it sit for 5 minutes, then stir until smooth and glossy.
- Place one cake layer on a serving plate and spread a layer of chocolate ganache on top. Place the second cake layer on top and spread the remaining ganache over the top and sides of the cake.
- Refrigerate the cake for at least 30 minutes to allow the ganache to set before serving. Enjoy!
