Ingredients
- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 4 cups of chicken or vegetable broth
- 1 cup of heavy cream
- 4 tablespoons of butter
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- In a large pot, melt 4 tablespoons of butter over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the diced potatoes and chicken or vegetable broth to the pot.
- Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes, or until the potatoes are tender.
- Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender in batches and blend until smooth, then return it to the pot.
- Stir in 1 cup of heavy cream and heat the soup over low heat until warmed through.
- Season with salt and pepper to taste.
- Ladle the soup into bowls and garnish with chopped fresh parsley.
- Serve hot and enjoy!
