  • 4 tablespoons of butter

Instructions

  • In a large pot, melt 4 tablespoons of butter over medium heat.
  • Add the chopped onion and sauté until translucent, about 5 minutes.
  • Add the diced potatoes and chicken or vegetable broth to the pot.
  • Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes, or until the potatoes are tender.
  • Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender in batches and blend until smooth, then return it to the pot.
  • Stir in 1 cup of heavy cream and heat the soup over low heat until warmed through.
  • Season with salt and pepper to taste.
  • Ladle the soup into bowls and garnish with chopped fresh parsley.
  • Serve hot and enjoy!
