Hungarian Chicken Paprikash

Ingredients
- 4 chicken thighs
- 2 tablespoons vegetable oil
- 2 onions, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons sweet Hungarian paprika
- 1 cup chicken broth
- 1 cup sour cream
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- Season the chicken thighs with salt and pepper.
- In a large skillet, heat the vegetable oil over medium-high heat. Add the chicken thighs and cook until browned on both sides, about 5 minutes per side. Remove the chicken from the skillet and set aside.
- In the same skillet, add the chopped onions and cook until softened, about 5 minutes. Add the minced garlic and cook for an additional 1 minute.
- Stir in the sweet Hungarian paprika and cook for 1 minute to release its flavor.
- Pour in the chicken broth and return the chicken thighs to the skillet. Bring the mixture to a simmer, then reduce the heat to low, cover, and cook for 30 minutes, or until the chicken is cooked through.
- Remove the chicken from the skillet and set aside. Stir the sour cream into the sauce until well combined. Season with salt and pepper to taste.
- Return the chicken to the skillet and heat through, about 5 minutes.
- Garnish with chopped fresh parsley before serving.
