Instructions

  • Warm the refried beans in a small saucepan over low heat, stirring occasionally.
  • In a large skillet, heat the vegetable oil over medium heat. Once hot, fry the corn tortillas one at a time for about 1 minute on each side until crispy. Remove and drain on paper towels.
  • In the same skillet, fry the eggs to your desired doneness, seasoning with salt and pepper.
  • To assemble, place two fried tortillas on each plate. Spread a layer of refried beans on each tortilla. Top one tortilla with a fried egg and ladle the red salsa over it. Top the other tortilla with the remaining fried egg and ladle the green salsa over it.
  • Garnish with crumbled queso fresco and chopped cilantro, if desired.
  • Serve immediately and enjoy!
