Ingredients
- 4 corn tortillas
- 4 eggs
- 1 cup of refried beans
- 1/2 cup of red salsa
- 1/2 cup of green salsa
- 1/4 cup of vegetable oil
- Salt and pepper to taste
- 1/4 cup of crumbled queso fresco (optional)
- 1/4 cup of chopped fresh cilantro (optional)
Instructions
- Warm the refried beans in a small saucepan over low heat, stirring occasionally.
- In a large skillet, heat the vegetable oil over medium heat. Once hot, fry the corn tortillas one at a time for about 1 minute on each side until crispy. Remove and drain on paper towels.
- In the same skillet, fry the eggs to your desired doneness, seasoning with salt and pepper.
- To assemble, place two fried tortillas on each plate. Spread a layer of refried beans on each tortilla. Top one tortilla with a fried egg and ladle the red salsa over it. Top the other tortilla with the remaining fried egg and ladle the green salsa over it.
- Garnish with crumbled queso fresco and chopped cilantro, if desired.
- Serve immediately and enjoy!
