Instructions

  • In a blender, combine 1 cup of long-grain white rice and 2 cinnamon sticks. Blend until the rice and cinnamon sticks are finely ground.
  • Transfer the rice and cinnamon mixture to a large bowl and add 4 cups of water. Let it sit at room temperature for at least 3 hours, or overnight for best results.
  • After the rice and cinnamon mixture has soaked, blend it again until smooth.
  • Strain the mixture through a fine-mesh sieve into a pitcher, pressing on the solids to extract as much liquid as possible.
  • Stir in 1/2 cup of white sugar, 1 teaspoon of vanilla extract, and 1 cup of milk. Mix until the sugar is completely dissolved.
  • Refrigerate the horchata until chilled, then serve over ice. Enjoy!
