Instructions

  • In a blender, combine 1 cup of long-grain white rice and 2 cups of water. Blend until the rice is coarsely ground.
  • Add another 2 cups of water to the blender and let the rice mixture soak for at least 2 hours or overnight.
  • After soaking, blend the rice mixture again until smooth. Strain the mixture through a fine-mesh sieve into a pitcher, discarding the rice solids.
  • Stir in 1/2 cup of white sugar, 1 teaspoon of ground cinnamon, 1 teaspoon of vanilla extract, and 2 cups of milk. Mix well until the sugar is dissolved.
  • Refrigerate the horchata until chilled, about 1-2 hours.
