Instructions

  • In a medium saucepan, combine 2 cups of whole milk, 1 cup of heavy cream, and 3/4 cup of honey. Heat over medium heat, stirring occasionally, until the mixture reaches a simmer. Remove from heat and let it cool slightly.
  • In a separate bowl, whisk together 4 large egg yolks and 1/4 cup of granulated sugar until pale and slightly thickened.
  • Slowly pour the warm milk mixture into the egg yolk mixture, whisking constantly to temper the eggs. Pour the mixture back into the saucepan.
  • Cook the mixture over medium heat, stirring constantly, until it thickens and coats the back of a spoon, about 5-7 minutes. Do not let it boil.
  • Strain the mixture through a fine-mesh sieve into a clean bowl to remove any cooked egg bits. Let it cool to room temperature, then cover and refrigerate for at least 4 hours or overnight.
  • Once the mixture is thoroughly chilled, pour it into an ice cream maker and churn according to the manufacturer's instructions, usually about 20-25 minutes.
  • During the last 5 minutes of churning, add in 1/2 cup of chopped walnuts to incorporate into the gelato.
  • Transfer the gelato to a freezer-safe container, cover with plastic wrap directly on the surface to prevent ice crystals from forming, and freeze for at least 2 hours before serving.
  • Scoop the honey walnut gelato into bowls or cones, and enjoy!
