  • In a large bowl, toss 1 pound of carrots with 2 tablespoons of olive oil, 2 tablespoons of honey, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper until the carrots are evenly coated.
  • Spread the carrots in a single layer on a baking sheet lined with parchment paper.
  • Roast in the preheated oven for 20-25 minutes, or until the carrots are tender and starting to caramelize, stirring once halfway through.
  • Remove from the oven and transfer the roasted carrots to a serving dish.
