Ingredients
- 1 pound of carrots, peeled and sliced into sticks
- 2 tablespoons of olive oil
- 2 tablespoons of honey
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1 tablespoon of fresh parsley, chopped (optional)
Instructions
- Preheat the oven to 400 degrees F.
- In a large bowl, toss 1 pound of carrots with 2 tablespoons of olive oil, 2 tablespoons of honey, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper until the carrots are evenly coated.
- Spread the carrots in a single layer on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 20-25 minutes, or until the carrots are tender and starting to caramelize, stirring once halfway through.
- Remove from the oven and transfer the roasted carrots to a serving dish.
- Garnish with 1 tablespoon of fresh chopped parsley, if desired.
