Instructions

  • Place the chicken leg quarters in a large resealable plastic bag and pour the marinade over the chicken. Seal the bag and refrigerate for at least 4 hours, or overnight for best results.
  • Preheat the oven to 375°F (190°C).
  • Remove the chicken from the marinade and pat dry with paper towels. Discard the marinade.
  • Heat 2 tablespoons of olive oil in a large oven-safe skillet over medium-high heat. Add the chicken, skin side down, and cook for 5 minutes, or until the skin is golden brown.
