Instructions

  • Preheat grill to medium-high heat.
  • In a small bowl, whisk together 1/4 cup honey, juice of 2 limes, 2 tablespoons olive oil, 1 teaspoon salt, and 1/2 teaspoon black pepper to make the marinade.
  • Place the chicken breasts in a resealable plastic bag and pour half of the marinade over the chicken. Seal the bag and massage the marinade into the chicken. Let it marinate in the refrigerator for at least 30 minutes.
  • Grill the marinated chicken breasts for 6-7 minutes on each side, or until fully cooked and grill marks appear. Remove from the grill and let rest for 5 minutes before slicing.
  • In a large bowl, toss together 8 cups of mixed salad greens, 1 cup halved cherry tomatoes, and 1/2 thinly sliced red onion.
  • Divide the salad mixture onto 4 plates and top each with sliced grilled chicken.
  • Drizzle the remaining honey-lime marinade over the salads.
  • Sprinkle each salad with 1 tablespoon of sliced almonds and 1 tablespoon of crumbled feta cheese.
  • Serve immediately and enjoy!
