- 1/4 cup cornstarch
- 1/4 cup vegetable oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup broccoli florets
- 1/2 cup snow peas
- 1/2 cup cashews
- 3 cloves garlic, minced
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 tablespoon cornstarch dissolved in 2 tablespoons water
- Sesame seeds and green onions for garnish
Instructions
- In a large bowl, toss the cubed tofu with 1/4 cup of cornstarch until evenly coated.
- Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat. Add the tofu and cook until crispy and golden brown on all sides. Remove from the skillet and set aside.
- In the same skillet, add the remaining 2 tablespoons of vegetable oil. Add the garlic and stir-fry for 30 seconds.
- Add the bell peppers, broccoli, and snow peas. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
- In a small bowl, mix together the soy sauce, honey, rice vinegar, and sesame oil. Pour the sauce into the skillet with the vegetables.
- Add the crispy tofu and cashews to the skillet. Stir in the cornstarch mixture and cook for 1-2 minutes until the sauce thickens and coats the tofu and vegetables.
- Garnish with sesame seeds and green onions. Serve the honey glazed tofu stir-fry with cashews over steamed rice or noodles. Enjoy!
The history of Honey Glazed Tofu Stir-Fry with added cashews can be traced back to the fusion of Asian and Western culinary influences. This dish combines the savory flavors of tofu and the sweetness of honey, complemented by the crunch of cashews. It is believed to have originated in the vibrant kitchens of Asian-American chefs who sought to create a unique and flavorful vegetarian stir-fry. The dish gained popularity in the United States during the rise of vegetarian and plant-based diets, with chefs and home cooks alike experimenting with different variations. The addition of cashews adds a delightful nuttiness and texture to the dish, elevating its overall flavor profile. Today, the best versions of this dish can be found in Asian fusion restaurants that specialize in vegetarian cuisine. The key to a successful Honey Glazed Tofu Stir-Fry with added cashews lies in achieving the perfect balance of sweet and savory flavors, as well as ensuring that the tofu is well-glazed and the cashews are toasted to perfection. For those looking to recreate this dish at home, it's important to use high-quality tofu that can absorb the honey glaze, and toasting the cashews before adding them to the stir-fry can enhance their nutty flavor. Additionally, experimenting with different vegetables and spices can add a personal touch to the dish, making it a versatile and customizable recipe for home cooks.
