Ingredients
- 1 block (14 oz) of firm tofu, drained and cubed
- 1/4 cup cornstarch
- 1/4 cup vegetable oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 cup broccoli florets
- 1/2 cup snow peas
- 1/2 cup cashews
- 3 cloves garlic, minced
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 tablespoon cornstarch dissolved in 2 tablespoons water
- Sesame seeds and green onions for garnish
Instructions
- In a large bowl, toss the cubed tofu with 1/4 cup of cornstarch until evenly coated.
- Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat. Add the tofu and cook until crispy and golden brown on all sides. Remove from the skillet and set aside.
- In the same skillet, add the remaining 2 tablespoons of vegetable oil. Add the garlic and stir-fry for 30 seconds.
- Add the bell peppers, broccoli, and snow peas. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
- In a small bowl, mix together the soy sauce, honey, rice vinegar, and sesame oil. Pour the sauce into the skillet with the vegetables.
- Add the crispy tofu and cashews to the skillet. Stir in the cornstarch mixture and cook for 1-2 minutes until the sauce thickens and coats the tofu and vegetables.
