  • Preheat the oven to 375°F (190°C).
  • On a lightly floured surface, roll out the puff pastry into a 10x14 inch rectangle. Transfer to a parchment-lined baking sheet.
  • In a bowl, toss the peach slices with honey, lemon juice, sugar, and cinnamon until well coated. Arrange the peach slices in overlapping rows on top of the puff pastry, leaving a 1-inch border.
  • Sprinkle the sliced almonds over the peaches, then fold the edges of the puff pastry over the peaches, pleating as needed.
  • Bake for 30-35 minutes, or until the pastry is golden brown and the peaches are tender.
  • While the tart is baking, scoop the vanilla ice cream into 8 small balls and place them in the freezer to firm up.
  • Once the tart is done, remove it from the oven and let it cool for 10 minutes.
