Instructions

  • Preheat the oven to 375°F (190°C).
  • Roll out the puff pastry on a lightly floured surface to fit a 9-inch tart pan. Press the pastry into the pan and trim any excess. Prick the bottom of the pastry with a fork.
  • Arrange the peach slices in a circular pattern over the pastry, slightly overlapping them. Drizzle the honey over the peaches and sprinkle with sliced almonds.
  • Sprinkle the granulated sugar over the peaches and almonds. Bake for 30-35 minutes, or until the pastry is golden brown and the peaches are tender.
  • While the tart is baking, prepare the caramel sauce. In a small saucepan, melt the butter over medium heat. Stir in the heavy cream, brown sugar, vanilla extract, and a pinch of salt. Cook, stirring constantly, for 5-7 minutes, or until the sauce thickens and coats the back of a spoon.
  • Once the tart is done, remove it from the oven and let it cool for 10 minutes. Drizzle the caramel sauce over the tart before serving.
