Ingredients
- 4 salmon fillets (6 oz each)
- 1/4 cup honey
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 1 teaspoon minced garlic
- 1/2 teaspoon ground black pepper
- 2 ripe mangoes, diced
- 1/2 red onion, finely chopped
- 1 red bell pepper, diced
- 1/4 cup fresh cilantro, chopped
- 1 jalapeno pepper, seeded and minced
- 2 tablespoons lime juice
- Salt to taste
Instructions
- Preheat the grill to medium-high heat.
- In a small bowl, mix together 1/4 cup of honey, 2 tablespoons of soy sauce, 1 tablespoon of olive oil, 1 teaspoon of minced garlic, and 1/2 teaspoon of ground black pepper.
- Brush the honey glaze over the salmon fillets, coating them evenly on both sides.
- Place the salmon fillets on the grill and cook for 4-5 minutes on each side, or until the fish flakes easily with a fork. Remove from the grill and set aside.
- In a medium bowl, combine 2 diced ripe mangoes, 1/2 finely chopped red onion, 1 diced red bell pepper, 1/4 cup of chopped fresh cilantro, 1 minced jalapeno pepper, and 2 tablespoons of lime juice. Season with salt to taste and mix well to make the mango salsa.
- To serve, place the grilled salmon fillets on a serving platter and top each fillet with a generous spoonful of mango salsa. Enjoy!
